Squash, Carrot & Ginger Soup
Warming squash, carrot and ginger. A grounding luteal-phase bowl with a Full Cycle Blends sachet stirred in.
Ingredients
- 1 butternut squash
- 2 carrots
- 1 small knob of ginger
- 2 tbsp coconut milk
- 500ml vegetable stock
- 1 sachet Full Cycle Blends
Method
- Aim for the carrots to make up about 30 percent of the total veg. Squash sizes vary, so adjust to suit.
- Size the ginger to taste. A thumbnail to start is a good baseline.
- Add the squash, carrots and ginger to a soup maker, cover with stock and cook on the soup setting. Or cook on the hob until soft, then blend.
- Stir in the Full Cycle Blends sachet once served.
- Add the coconut milk to taste.
