Squash, Carrot & Ginger Soup

Warming squash, carrot and ginger. A grounding luteal-phase bowl with a Full Cycle Blends sachet stirred in.

Ingredients

  • 1 butternut squash
  • 2 carrots
  • 1 small knob of ginger
  • 2 tbsp coconut milk
  • 500ml vegetable stock
  • 1 sachet Full Cycle Blends

Method

  1. Aim for the carrots to make up about 30 percent of the total veg. Squash sizes vary, so adjust to suit.
  2. Size the ginger to taste. A thumbnail to start is a good baseline.
  3. Add the squash, carrots and ginger to a soup maker, cover with stock and cook on the soup setting. Or cook on the hob until soft, then blend.
  4. Stir in the Full Cycle Blends sachet once served.
  5. Add the coconut milk to taste.
